BANGKOK, Thailand -- East Asian hotel giant Hongkong and Shanghai Hotels, owner of Peninsula Hotels, has introduced a new tool for seafood transparency between Asian chefs and suppliers, according to the company’s director for corporate responsibility Janice Lao.
